Ham Cornbread Muffins

My sister recently went to an outdoor wedding that had a country theme.  She raved about how beautifully it was decorated and how good the food was.  I asked her if she took pictures but she said she didn't think it would be nice to take photos of the wedding venue and not the wedding party.  I have to admit, I agree with that.  She indicated that they had a cascade of muffins and cupcakes (displayed on a quilt) and one muffin was a mini cornbread muffin with chopped ham.  It sounded so good, I wanted to try my own.  So I started with ...
 cornbread mixes (I like to mix different kinds).
 I added a small can of cream style corn.
 Mixed everything together.
 I added a little grated cheese with the chopped ham.
 Ready to go into the oven.
 Baked for 20 minutes.
 Here's what it looks on the inside.
I took a couple dozen to work and they loved them!  
My only change is that I would add more ham and cheese, however,
no one complained.

A New Cardmaker

You know my daughter, Kimberly, recently moved to the D.C. area.  In the last month, she spent the weekend with my cousin and his family who live in Virginia.  As it turns out, while she was visiting them, she took a card class.  This sparked her interest again in crafting and card making, so I put together a box of craft stuff and shipped it off to her.
As soon as she had some free time, she made this card.  It warms my heart.  :)

Saturday - A Great Day for Kate!


Kate asked me to go with her to test drive a few cars on Saturday, so we started our day at 
Starbucks.  Then we headed off to a few of the local car dealerships, with the intent of NOT buying a car but simply looking at a few.  But by the end of the day...

Friday Night Started with a Blast!

Many years ago I started listening to Country Western singer/songwriter, Phil Vassar.  I mentioned to a friend that going to one of his concerts was on my bucket list.  In fact, it was actually the only thing on my bucket list.  She didn't know who he was and "googled" him.  We found out that he was scheduled to play at The Talking Stick Casino, I immediately bought four tickets.  Well, that concert was Friday night!
I went with Pam (my friend), my daughter Kate, and her friend.  Our seats were so close to the stage, we thought it was pretty cool.  I think Kate was pleasantly surprised.  I liked that it was a smaller venue which made it much more informal.  He actually played a few songs, then let the crowd pick the songs we wanted to hear.  It was a good time.  He is great on the piano and as my friend stated "he has a great pair of lungs."  We had a very nice time and I would definitely go back there for other concerts.  The last concert I went to was N'Sync about 15 years ago.
It was a great way to start the weekend!

Long Arm Quilting Class

This weekend I was fortunate enough to take a long arm quilting class at 35th Avenue Sew 'n Vac.  They have a great selection of quilting machines, patterns, notions, fabrics, and kits.  I took the class with Diana and her sister, Jean Ann.  We all had a wonderful time and learned some new free-hand stitches.
Our instructor, Vicki, did such a great job of showing us ten different stitches and then having us each practice them on the big quilter.   I was only able to take one picture because I was busy paying attention to what was being said.
After class, Janie (another sister), met us toward the end of class and then we all went to lunch at Pei Wei.  It is always nice to spend time with them - they make me laugh.
I went home and did a little bit of sewing.  I have been wanting to make Sophie and Jack pillow cases to use in their kennels.  I thought it would be a good way to get rid of the old pillows I no longer want.  Both of them enjoy laying on pillows - if given the chance.  So I made Sophie a cover.  I'll do Jack's another night.  It is so darn cute.
